A fantastic hummus recipe from the Glad Cow cookbook (written by my wife, so I have permission to share) Have it with cut up veggies or a spread for sandwiches. Ingredients

    1 can garbanzo beans, drained
    2-3 cloves garlic
    Juice of 1 lemon
    3 Tbs tahini
    1/4 cup liquid (water,vegetable juice, olive oil, etc)
    1 tsp salt
    1/2 tsp cumin

    For variation add 1cup of any of the following:
    Olives
    Spinach
    Carrot
    Artichoke hearts
    Roasted Peppers
    Fresh Herbs
    Sun Dried Tomatoes
    Kale

Directions

Put all ingredients in a food processor and process until thick and creamy. Use as a dip for Veggies or a spread for crackers and breads.

The nutrition info was based on water for liquid and with 1 cup spinach added.
