Introduction

Ingredients

1 lb. dried black beans
1 large onion, diced
1 bell pepper (I use green), diced
1 (32 oz) box of Imagine Organic No-Chicken Broth
1 can Rotel Tomatoes (or other chopped tomatoes with green chiles)
1 Tbsp. extra virgin olive oil
1 tsp. Cumin seed, ground (or more to taste)
4 cloves garlic (or more)
Directions
soak black beans over night in plenty of water or place them in a pot with plenty of water and bring to a boil then turn off heat and let sit for an hour. Drain off water and rinse beans, set aside.
Saute onions, bell pepper and garlic in olive oil over medium heat (use the pot the beans will be put in) until tender. Add tomatoes, broth and beans bring to a simmer. I cook my beans for 3 or more hours usually adding water if neccissary. When close to done add cumin (and any other spice you wish). Serve over rice (I use long grain brown). Very good with some sharp cheddar and sour cream mixed in. Enjoy.

I just made a single serving of black beans & rice loosely based off this recipe & it was extremely good!
i used canned black beans (plus the juice) & i didnt have canned tomato so i just cut one up & added canned green chilies. i also added coriander red pepper flakes & a dash of curry & brown ric - 2/4/08
