Introduction

Try whole wheat pasta, or a low fat cheddar cheese soup to lighten up this recipe. You could also use lean ground beef in place of the turkey. The original recipe calls for 4 servings, however, you could also have 6 smaller servings. Try whole wheat pasta, or a low fat cheddar cheese soup to lighten up this recipe. Ingredients

    Salt for cooking the pasta
12-16 ounces wagon wheels (rotelle) or other short pasta
1 pound ground turkey (93% lean)
    2 teaspoons olive oil
1 large onion (about 1 cup chopped)
1.5 teaspoons chili power, or to taste
    .5 teaspoon garlic powder
2 cups mild or hot bottled salsa
1 can (10 3/4 ounces) condensed Cheddar cheese soup

Directions

4-6 servings

Bring 3 quarts lightly salted water to a boil in a covered 4 1/2 quart or larger pot. When the water reaches a rapid boil add the pasta and cook, uncovered, until just tender, following the package directions.

Add the turkey to the skillet. Add the chili powder and garlic powder. Cook, turning and breaking up the meat, until it is crumbled and browned, 7 to 8 minutes.

Add the salsa and the cheese soup and stir well to combine.

When the pasta is done, drain it well and add it to the skillet. Stir until the pasta is coated with the sauce. Serve at once.
