Introduction
Yet another use for the abundance of zucchini we seem to have every summer. These soft, slightly spicy chocolate chip cookies are nice treat. Ingredients

3/4 c. light margarine
1 1/2 c. sugar
1 egg white
1 1/2 tsp vanilla
1 1/2 c. pureed zucchini
1 1/4 c. white flour
2 c. whole wheat flour
2 tsp baking powder
1/2 tsp. salt
2 tsp. cinnamon
1 c. mini-chocolate chips
Directions
Preheat oven to 350 degrees. Grease cookie sheets. Cream together margarine and Splenda in large bowl. Beat in egg and vanilla. Stir in zucchini.
In a separate bowl, combine dry ingredients. Stir into zucchini mixture. Mix in chocolate chips. Drop by heaping spoonfuls onto the prepared cookie sheets.
Bake 10-12 minutes, until edges are light brown. cool on wire racks.
Makes about 3 1/2 dozen cookies.
