Introduction

Number of Servings: 42

Ingredients

    3/4 c. light margarine
    1 1/2 c. sugar
    1 egg white
    1 1/2 tsp vanilla
    1 1/2 c. pureed zucchini
    1 1/4 c. white flour
    2 c. whole wheat flour
    2 tsp baking powder
    1/2 tsp. salt
    2 tsp. cinnamon
    1 c. mini-chocolate chips

Directions

Preheat oven to 350 degrees. Grease cookie sheets. Cream together margarine and Splenda in large bowl. Beat in egg and vanilla. Stir in zucchini.
In a separate bowl, combine dry ingredients. Stir into zucchini mixture. Mix in chocolate chips. Drop by heaping spoonfuls onto the prepared cookie sheets.
Bake 10-12 minutes, until edges are light brown. cool on wire racks.

Makes about 3 1/2 dozen cookies.

    A nice cake-like cookie. A rounded tablespoon scoop make exactly 3 1/2 dozen. I used 1/3 cup regular margarine in place of the light maragrine, and finely grated zucchini instead of pureeing the squash. Don't expect the cookie to spread at all, so shape them before baking. - 1/31/10

    Really good except don't expect them to look like regular cookies. They have a weird shape to them. - 9/2/08
