Ingredients

1 small onion, sliced thin or small dice
8 med. mushrooms, washed & dried, sliced
1/2 red bell pepper, sliced
3 cups Fresh spinach, washed
Cayenne Pepper to taste

Directions
Serving size 1-2 as side dish
1. Have all vegetables prepped.
2. Heat large saute pan to medium.
3. Add 1 tbsp of vegetable broth to pan
4. Add onions and saute while stirring occasionally for 2 minutes.
5. Add mushrooms and saute for 3 minutes. The mushrooms will begin to release their liquid. Turn heat down slightly and add Red Bell Peppers. Saute for 2 mintues before adding Spinach.
6. Allow the spinach to begin wilting. Add 1-2 tbsp more of vegetable broth, stiring periodically.
7. Season and add cayenne pepper to taste and cook for 1 minute more.
Variations: To vary the dish add 1/2 tsp of any of the following: turmeric, curry powder, masala, thyme.
