Ingredients

1 Tb olive oil
1 8 oz package fresh mushrooms, cleaned and quartered
1 can (7.75 oz) spinach, drained
1/4 c. fat free half and half
1/4 c. light sour cream
1/4 c. parmesan cheese, grated
4 oz. light cream cheese (neufchatel)
1 Lb chicken breast pieces (bite size)
Directions
Heat oil in medium size skillet and saute mushrooms. When mushrooms are browned and cooked through, transfer them to a medium sauce pan. Add spinach, half and half, sour cream, parmesan, and cream cheese and heat to slow simmer. Meanwhile, saute chicken in mushroom skillet until cooked through. When spinach sauce is well blended and heated through and the chicken is cooked through, combine them.
Makes 4 - 1 cup servings
Serving suggestion: serve with rice
Variations:
1) Instead of chicken, substitute shrimp, scalops, or both.
2) Leave chicken out, blend the sauce in a blender, and serve as a spinach dip appetizer (chilled or hot) with tolerated crackers or bread.
