Ingredients

Sweet Pea Fried Rice
8 oz turkey bacon (I leave out the bacon and use oil then will add shrimp, chicken or pork)
8 scallions, white and green parts
1 clove garlic, chopped
6 cups cooked rice (I’m using brown)
¼ cup soy sauce
1 10 oz package frozen peas, thawed
4 large eggs (I’m using egg beaters
Salt and pepper
Directions
Put 1 tbsp oil into skillet, add scallions and garlic. Cook on med. Heat 3-5 minutes. Add rice to skillet and stir to blend scallions and garlic for about 2 minutes. Stir in soy sauce and peas. Push mixture to one side and pour in eggs. Cook eggs until slightly set on bottom, about 2 minutes. Mix eggs into rice mixture and stir until fully blended. Add your shrimp, bacon, pork, chicken or whatever you will be using. Season with salt and pepper and enjoy!
