Ingredients

2 Chicken Breast
9 Hot and Spicy Pork Rinds, crushed
1 Egg White
Cayenne Pepper and Black Pepper to taste
1/2C Reduced/Low Fat Mozzarella
2 Whole Wheat Sandwich/Hoagie Rolls
1/2C Lettuce, shredded
2Tbsp Light Mayo
1tsp wasabi, prepared
Directions
1.Preheat oven to 375 degrees.
2.Rinse chicken breasts and trim off any fat. Season breasts with cayenne and black pepper. Dip each breast in the egg white, then dip in the crushed pork rinds until chicken is coated. Cook on medium heat in a non stick skillet for a few minutes on each side just until the outsides of the chicken turn white.
3.Once both sides have been cooked, place chicken in a small baking dish and bake in the oven for 20 minutes.
4.While chicken is baking, mix together the mayo and wasabi paste until well blended. Cut the hoagie/sandwich rolls in half length wise and place on a sheet pan. Spread the wasabi mayo on both sides of the cut sandwich rolls. Top the bottom of the rolls with the lettuce.
5.When chicken is done baking, turn oven to broil.
6. Place each chicken breast on top of the lettuce. Top with mozzarella and place the top of the sandwich roll on top of the cheese.
7.Place sandwich's in the oven and bake until mozzarella is melted, be carefull not to burn the rolls!
8.Enjoy!!!
