Introduction

This soup has a kick to it - but you can moderate that by reducing the seasonings. I use low-sodium broth which isn't in the list. This soup has a kick to it - but you can moderate that by reducing the seasonings. I use low-sodium broth which isn't in the list.

Ingredients

1lb beef sirloin steak, sliced 1/4" thick ribbons
    2 tbsp olive oil
    3 tsp crushed garlic
    1/2 diced onion
1 lb new potatoes, diced to 1/2"
1/2 lb carrots, diced to 1/2"
    9 oz frozen corn
    9 oz frozen peas
    1 tsp dried basil
    1-2 tbsp Spicy! Mrs. Dash
1 tsp fresh cracked black pepper
1/3 cup of barbecue sauce, regular
7.5 cups reduced sodium beef broth
    1.5 tbsp worchestershire sauce

Directions

Makes 14 cups (4.6 x 3 cup servings).

Saute beef, onion, garlic and olive oil.
Add above to a large soup pot with beef broth or prepared bouillon.
Dice carrots and potatoes, add to pot. (I parboil these in the microwave first if I'm making this recipe in a rush!)
Add frozen peas and corn, barbecue sauce, worchestershire sauce and seasonings.
Stir occasionally, bring to a boil.
Let simmer until potatoes and carrots are tender.

Serve with hot biscuits or bread.
