Ingredients

2 Boneless Skinless Chicken Breasts
2 Tbsp chopped fresh Basil
1 tsp chopped fresh Thyme
1 tsp ground oregano
2 Tbsp extra light virgin olive oil
4 oz soft goat cheese
4 whole wheat tortillas
Directions
Dice the chicken breasts into one inch or smaller pieces. Place in a medium size bowl with olive oil, basil, thyme, and oregano. Allow to marinate in the fridge for one hour. Sautee Chicken in Medium skillet over medium to medium-high heat until done. (Don't put any extra oil in the skillet, the oil on the chicken will be enough.) Meanwhile, spread one half of each tortilla with one ounce of the soft goat cheese. When the Chicken is done cooking, distribute it in four equal portions among the tortillas. Fold the torillas in half. Working in batches, place the tortilla in the skillet. Allow the cheese to further soften and melt, becoming a quesadilla. Plate and enjoy. May serve with fat free sour cream or salsa.
