Ingredients

    1 Can solid white albacore tuna packed in water (drained)
    1 Tbsp. chopped red onion
    1Tbsp. chopped walnuts
    1Tbsp. chopped raisins
    2 Tbsp. light ranch dressing
    1/4 tsp. dill paste
    2 rye fiber crackers such as Wasa
    4 Tbsp. shredded reduced fat cheese
    splash of lemon juice
    salt and pepper to taste, if desired

Directions

Mix together tuna, ranch dressing, dill paste, and lemon juice. Add red onion, walnuts, and raisins and mix. Assemble half of the tuna mixture on each cracker and sprinkle 2 Tbsp of cheese on each. Place tuna crackers in microwave for 20 seconds or toaster oven until cheese is slightly melted. Makes 2 open face tuna melt crackers. (hint: red onions can be soaked in water for about 10 minutes to take some of the bite out and leave them with a sweet, mild flavor)
