Ingredients

    1 1/4 Cup Brown Rice
    1 bonless skinless Chicken Breast
    2 Cups Chcken Broth
    4 Tsp Olive Oil
    2 Tsp Cilantro (optional)
    3 Cloves Chopped Garlic
    4 oz Tomato Sauce
    1 1/2 Cup Frozen or Canned corn
    Red Pepper (optional)
    2 Tbs Taco Seasoning mix
    Salt & Pepper to taste

Directions

Rinse Rice place in sauce pan or rice cooker add 2 tsp olive oil to prevent sticking. Add the chicken broth bring, 2 Tbs taco seasoning, corn to boil simmer.
Cut chicken into thin strip about 1 inch wide and 1 inch long place in bowl add remaing taco season cilanto red pepper salt and pepper to chicken and stir to coat well.
Add remaing 1 tsp olive oil to fry pan heat oil add garlic saute chicken mix until chicken is cooked through remove from heat stir in tomato sauce.
About 5 minutes before rice has completed cooking add chicken mixture and stir well let stand a few minutes and serve hot.
