This is a delicious cake if you trying to watch your fat intake, as well as calories. This is a delicious cake if you trying to watch your fat intake, as well as calories.
Number of Servings: 12


    1 box Pillsbury Reduced Sugar Classic Yellow Cake Mix
    1/2 cup no sugar added applesauce
    1 can mandarin oranges in light syrup (with juice)
    4 egg whites

    8 oz. fat free Cool Whip
    1 big can crushed pineapple (no sugar added)
    1 pkg vanilla instant fat free sugar free pudding mix.


Preheat oven to 350 degrees. Combine the cake mix, applesauce, mandarin oranges (including the juice), and the 4 egg whites in a bowl. Beat on medium spead for 2 minutes. Spray cake pan with PAM and pour in batter. Bake for 34 minutes or until a toothpick inserted comes out clean. Cool cake completely before icing.

ICING: Combine the Cool Whip, crushed pineapple (including the juice), and the pkg of pudding mix. Blend on medium speed for 2 minutes. Spread on cooled cake. Serves 12, cake can also be cut and frozen to be eaten later.
