Introduction

South Beach Friendly Mexican casserole. South Beach Friendly Mexican casserole.

Ingredients

    2 lbs. beef (or turkey)
    1/2 cup diced onion
    ½ tsp. garlic
    6 oz. tomato paste
    1 C. fat free cottage cheese
    1 C. fat free sour cream
    8 oz. fat free shredded cheddar
    2 cans rotel

    Unsure why, but the calories are adding up much higher than I am sure it is. Sorry about that!

Directions

Preheat oven to 350. Brown meat and drain. Add onion bits, garlic powder, 1 can rotel (make sure to drain it or it will make this soupy) and tomato paste with some salt and pepper to taste. Cook over low heat for about 10 minutes. In another bowl, mix sour cream, cottage cheese and other can of rotel (drained).

In a larger bowl, combine meat with sour cream mixture. Add ½ the cheese and mix lightly. Pour mixture into greased casserole dish and cover with remaining cheese. Bake for about 15-20 minutes.

    Very Good
    I used a small fresh onion and beef. We ate it in whole wheat tortillas...not exactly south beach, but this might be a little weird to eat plain, since it's mostly meat. It was also a little soupy to really be considered a casserole...might try adding brown rice next time. Baked for only 18 mins. - 3/16/11

    Incredible!
    I cooked this tonight and it was wonderful! I used ground sirloin instead of turkey. Nutrition info is not accurate. Calories are actually much less, computed with regular cheese and extra meat. - 9/7/09

    I made this with turkey and it was kind of bland. I will make it again but with beef. - 10/17/08
