Ingredients

    Eggplant, 1000 gr(Chose large ones.Makes two of them)
    Green Peppers (bell peppers), 1 cup, strips
    *Peppers, sweet, red, fresh, 2 medium (approx 2-3/4" long, 2-1/2"
    Red Ripe Tomatoes, 3 medium whole (2-3/5" dia)
    Garlic, 3 cloves
    *Lemon Juice, 2 wedge yields
    Cider Vinegar, 1 tbsp

Directions

Put eggplants green and red peppers in a try.Heat owen 200 C place the try.Wait until peppers get brownish colour and take them out.Leave eggplants put tomatoes next to them and wait until they get juicy.After that take out them,too.Start to peel all the vegs.This is going to be easy.Choped all the vegs in a bowl.Put aside some chill out.
Add garlic lemon juice and vinegar in it.Serve cold.
