Introduction

When I was a kid, my dad used to make this, but using half ripe and ripe tomatoes. Feel free to do it that way, or even a mix of ripeness. Ingredients

    3 large green tomatoes, diced. No need to peel unless you really want to.
    1 med onion, diced
    1 Tbs canola oil
    1/2 cup flour
    1 3/4 cups skim milk
    1/2 tsp salt
    1/2 tsp pepper - or to taste
    4 slices multi grain or 100% whole wheat bread, toasted, unbuttered

Directions

Approx 4 servings with about 3/4 cup tomato gravy on a large piece of toast.
Heat oil in skillet, medium-high heat, add onion, saute about 2 -3 minutes until turning transluscent. Add tomatoes. Stir occasionally, allowing some of them to brown. Put 1/2 cup flour in a 2 cup measure, add about 1/3 - 1/2 cup milk. If you have a wand blender, use it to mix thoroughly. Add the rest of the milk, it will be a little over 2 cups. Pour into the hot tomatoes, stir continually until gravy thickens. Serve on toast.
