Ingredients

    1 cup of red lentils
    2 sliced onions
    900g sliced carrots
    2 lites of vegetable stock
    2tsp ground coriander
    4 garlic cloves

Directions

Put all ingredients in pan, stir, season and bring to the boil. Lower heat, cover and simmer gently for 30 mins or until lentisl are cooked. Puree soup in a blender return to the pan to rehead, thin with a little extra water if neded before serving
