Ingredients

    2 Tablespoons olive oil
    1 cup of diced celery
    1 1/2 cup diced zucchini
    1 cup of fresh, sweet red peppers
    2 medium red tomatoes, quartered and then halved
    2 medium yellow tomatoes, quarterd and then halved
    2 cups Organic Baby Spring Salad Mix with herbs
    1 Tablespoon instant minced onion flakes
    1 Tablespoon anise
    1 Tablespoon garlic powder

Directions

In a skillet, heat olive oil over high heat. Add the diced celery, saute for one minute. Add zucchini, peppers, tomatoes, minced onion flakes, and garlic powder; cook until nearly done. Add the 2 cups of spring salad mix and anise seed. Cook until the greens are hot.

Sitr the mix and serve warm.
