Introduction

I serve this as a tomato salad, so you feel you can eat more of it-- but it works really well as a bruschetta too. Try serving up a healthy portion with a slice of bread on the side to sop up the lovely dressing. Ingredients

    4 large red ripe garden tomatoes (flavour is everything here)
    2 tbsp. good balsamic vinegar
    1 tbsp. olive oil
    1/2 tsp. brown sugar
    10-15 fresh basil leaves, chopped
    1/2 clove garlic, crushed
    1 tsp. coarse sea salt

Directions

Chop your tomatoes and put them into a bowl. Add the balsamic, olive oil, brown sugar, basil, garlic and salt. Toss. Allow to sit at room temperature for at least an hour. Enjoy! Serve 4.
