Ingredients
-
1/2 cup sour cream
1/2 cup mayonnaise
1/4 cup chopped fresh cilantro
1 package taco seasoning mix, divided
1 lb walleye or white fish fillet, cut into 1 inch pieces (about 4 fillets)
2 tablespoons extra light olive oil
2 tablespoons lime juice
1/4 cup dry grated bread crumbs
1 tsp. ground cumin
1 tsp. cayenne pepper
12 La Tortilla Factory low-carb flour tortillas
Directions
Combine sour cream, mayonnaise, cilantro and 2 tablespoons seasoning mix in small bowl to make sauce. Set aside.
Combine vegetable oil, lime juice and 2 tablespoons taco seasoning in medium bowl to make wet coating. Add fish and mix well to coat pieces well. Mix bread crumbs, cumin, and cayenne on small plate and pat fish pieces into mixture to coat.
Add fish to nonstick skillet. Cook, turning frequently, over medium-high heat for 4 to 5 minutes or until fish flakes easily when tested with a fork.
Fill warmed taco shells with fish mixture and top with prepared sauce and desired toppings. I make this with my cilantro slaw and serve with corn salsa or pico de gallo and avocados (not included in nutrition info).
