Introduction

Ingredients

    2 lbs extra lean ground beef
    1/2 large onion diced small
    1 cup celery diced small
    1 medium potato diced small
    1 14.5 oz can of petite diced tomatoes
    1 15.25 oz can of red kidney beans, rinsed
    1 box of organic chicken broth (32 oz)
    1 tbs oregano
    1 tsp garlic powder
    1 tbs salt
    1 tsp ground black pepper
    2 cups (uncooked) ditalini pasta

Directions

Brown the ground beef. When most of it is browned add the onions, celery and potatoes. Cook for 5-8 minutes until onion and celery looks transparent. Add remaining ingredients except for pasta. Let come to a boil then add pasta. Cover and bring heat to medium low. Let simmer for another 20 minutes or until pasta is done.
