Introduction
Halibut with a sweet and salty marinade, great for cookouts or family dinners. I make this dish gluten free and casein free, but this recipe will work fine with regular ingredients, too. Ingredients

1 lb halibut filets or steaks
Marinade:
2 tbsp honey
1 tbsp ghee / clarified butter or unsalted butter
1 tbsp lemon juice
2 tsp gluten free (or regular) soy sauce
1/2 tsp black pepper
2 cloves minced garlic
Directions
Another gluten free specialty I've discovered. If you plan on grilling the halibut, preheat your grill to medium-high. If you want to bake the halibut, preheat the oven to 350F.
1. Gently melt the ghee or butter.
2. Add all marinade ingredients together in a bowl. Stir gently until the mixture has an even consistency. (I normally do not add the ghee to the mixture if I plan on marinating the fish, as ghee tends to congeal at lower temperatures. In that case, I would add the melted ghee later on, in Step 4.)
3. (optional) Marinate the halibut in the mixture for 3 hours in a covered dish in the refrigerator.
4. Make sure the halibut is thoroughly coated in the marinade.
5. If grilling, grill the halibut for 5 minutes on each side, basting every few minutes, or until the fish can easily be flaked with a fork. If baking, bake the halibut for 20-30 minutes or until the fish can be easily flaked with a fork.
Makes 2 servings.
