175g/6oz/3/4 cup cream cheese
150g/5oz/2/3 cup low fat natural yoghurt
15ml/1 tbsp plain flour
25g/1oz/2 tbsp caster sugar
1 egg
1 egg white
1 tbsp lemon juice
200g/7oz/2 cups fresh or frozen thawed blackberries
Directions
1, Preheat overn to 180 deg C/350 deg F/ Gas 4.
Lightly grease and base-line a 18cm/7in sandwich tin
2, Place cream cheese in a bowl with Yoghurt, sugar, egg and egg white and mix. Add tablespoon of lemon juice or freshly squeezed lemon and mix. Fold in blackberries, reserving some for decoration.
3. pour mixture into lined sandwich tin and bake for 30-35 mins or until set. Turn off oven and leave to cool for another 30 mins.
4. Run a knife round edge of cheesecake and place on a warmed plate.
5. Decorate cheesecake with reserved blackberries and serve.
