Introduction

Number of Servings: 8

Ingredients

    One medium onion, chopped
    1 lb. lean ground beef
    1 can black beans (undrained)
    1 can red beans (undrained)
    1/2 can cut green beans, drained
    1 can golden yellow corn (drained)
    1 can diced tomatoes
    1 can Rotel tomatoes (diced tomatoes w\ chile peppers)
    1 can beef broth
    1 packet of Taco Seasoning

Directions

1. Chop onion and brown with ground meat. When meat is browned, drain any excess fat.
2. Add tomatoes and broth and stir to mix well.
3. Add beans and stir to mix well.
4. Add envelope of taco seasoning and mix well.
5. Bring to a boil and let then let simmer for 30 minutes, or until beans are tender.
Makes 8 to 10 servings approximately 1 cup each.
Tastes great with chips, but must calculate additional calories and sodium.
