Ingredients

    -6 cups of fresh baby spinach with stems removed
    -2 cups of mixed salad greens, shredded
    -1/8 cup of diced Vidalia onion
    -1/2 cup of sliced almonds
    -1/2 cup of raisins
    -1/8 cup of extra sharp cheddar cheese, shredded

    -Raspberry Walnut Vinaigrette salad dressing, served on the side (I think the Publix brand is the tastiest)

Directions

Begin by washing all vegetables. Remove stems from spinach and mixed greens if desired, then chop and add to a large salad bowl. Chop the onion and add to the bowl as well. Measure and add in all other ingredients, then toss and serve with dressing on the side. You can increase or decrease the amount of each ingredient to suit your own taste. I sometimes enjoy topping it with some fresh minced garlic, or homemade whole grain croutons. Enjoy!


Note: This salad should not be made ahead of time because the almonds will become soft and the cheese watery.
