Ingredients

1/2 cup catsup
2 cups water
1 tablespoon yellow or dijon mustard
1 tablespoon brown sugar
1 tablespoon balsamic vinegar
1/2 teaspoon salt
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon thyme
1/4 teaspoon pepper
1 cup finely chopped onions
1 cup finely chopped celery
3 cloves garlic
2 cups dry uncooked lentils
(hamburger buns)
(chopped raw onion, optional)
Directions
1.Place the catsup, water, mustard, brown sugar, vinegar, salt, basil, oregano, and thyme in the slow cooker. Turn it on and let it heat up.
2.Pick over and rinse the lentils. Set aside.
3.Spray a skillet with non-stick spray. Saute the onions, and celery for about 5 minutes, adding water as needed until cooked. Add the garlic and cook and stir for about a minute longer. Then add the rinsed lentils. Cook and stir for a minute or so until the lentils are hot.
4. Pour the lentil mixture into the slow cooker with the catsup/water/spices mixture.
5. Cook on low for about 6 hours.
6. Serve over hamburger buns. Makes 5 servings, 1 cup each. Garnish with chopped raw onion if desired.
