Ingredients

    3 tablespoons butter
    1 large onion, chopped
    4 cups potatoes, diced
    1 carrot, peeled and grated
    1 teaspoon salt
    1 tablespoon caraway seeds
    1 cup nonfat milk
    1 tsp dried parsley (or 1/4 cup fresh)

Directions

Melt the butter in a large saucepan or dutch oven over medium heat. Cook the onion until browned, but be cautious not to burn it. Add the potatoes, carrot, salt, caraway seeds, and enough water to cover the ingredients. Bring the mixture to a boil, reduce the heat, and cook until the potato cubes are tender. Turn off heat and stir in the milk and parsley.

Makes about 7 1-cup servings.
