Number of Servings: 2

Ingredients

    * Chickpeas (garbanzo beans) (drained & rinsed), 1 cup
    * Miracle Whip regular, 1 tbsp
    * Sweet Pickle Relish, 1 tbsp
    * Salt & Pepper
    * Low Fat or Fat Free Cheese of Choice, 1 oz

    * Bread, wheat (including toast), 4 slices

Directions

Makes 2 servings.

Mash chickpeas. Add Miracle Whip, sweet pickle relish and mix well. Salt & pepper to taste.
Toast bread.
Assemble sandwiches using half the mixture per sandwich.

If you have a toaster oven, I recommend toasting the cheese to the bread to melt it a bit. Using the toaster removes having to use oil or butter to fry them but you can certainly fry them using cooking spray or even bake them - whatever your preference! :)
