Introduction

Cute little mini muffins are good for breakfast or a snack! Cute little mini muffins are good for breakfast or a snack!
Number of Servings: 12

Ingredients

    Wet:
    1 medium banana, mashed
    1/4 c of brown sugar, packed
    1 egg
    2 tbsp apple sauce
    1/2 tsp vanilla

    Dry:
    1/2 c white flour
    1/4 c whole wheat flour
    1/2 tsp baking powder
    1/4 tsp baking soda
    1/4 tsp cinnamon

    Optional:
    Chopped walnuts
    Oats


Directions

In a small bowl, mix the wet ingedients until well blended.

In a larger bowl combine the dry ingredients. If you're adding walnuts put them in now.

Pour in the wet and mix just until everything comes together.

Spray a mini muffin pan with cooking spray and fill 12 cups up to the top. If there are unused cups fill them with water about half way up or a little more for even heating and to keep the pan from burning.

Optional: Sprinkle the top of the muffins with rolled oats. It makes them really cute and sneaks in a little extra whole grains.

Bake at 350 for 15-20 minutes or until a toothpick inserted in the middle comes out clean. I'd reccomend baking these on the 2nd rack in the oven (close to the top) to encourage browning on the top of the muffins.
