Introduction

You can add other veggies besides what I've included here. Other good choices include shredded carrots (they fade into the sauce!) or spinach. Also, any variety of pasta will work. So make this with whatever you have on hand. You can add other veggies besides what I've included here. Other good choices include shredded carrots (they fade into the sauce!) or spinach. Ingredients

    6 oz. Pasta, any variety
1/2 lb. Extra Lean Ground Beef
    1 1/2 c. Spaghetti or Marinara Sauce
    1/2 Onion, diced
    1/2 c. Zucchini, sliced
    2 Whole Tomatoes, diced

Directions

In a dutch oven, begin to boil water for the pasta.

In a large frying pan, brown ground beef. Once fully cooked, transfer to a strainer and rinse away excess fat. Before transferring the rinsed ground beef back into the pan, wipe the inside of the pan with a dry paper towel just to get rid of any fat that was left behind.

Transfer ground beef back into pan and add onions. Cook until onions are translucent. Add spaghetti sauce, sliced zucchini and tomatoes. Cover and let simmer.

The water in the dutch oven should be boiling by now. Add pasta to the boiling water and cook according to package instructions. Drain water off paster.

Top drained pasta with sauce. Makes 3 servings.
