Introduction

Usually a "bonnet" (aka jamaican) pepper is used (but i could not find it in the database); I would use olive oil instead of the canola oil she uses.
This is a dish my mother in law makes to serve along side her basic roti; it is delicious!!!!!

Ingredients

    1 lbs tomatoes
    1/2 hot pepper
    1 onion, finely chopped
    3 cloves garlic, chopped
    2 tablespoons oil
    salt to taste


Directions

Boil or roast tomatoes for about 10 mins. Drain off water and peel tomatoes, then mash them Add [finely chopped] onion and pepper and mix well Heat oil in frying pan, add garlic until light brown, taking care not to burn it Take off the fire and mix with the tomatoes
