Ingredients

    2 cups dry couscous
    4 oz fresh baby spinach
    4 oz feta cheese, crumbled
    1/4 cup olive oil
    juice from 1 lemon
    juice from 1 lime
    1 tsp dry basil
    1 tsp dry mint
    1 tsp salt (or to taste)
    1/4 tsp white pepper (or to taste)

Directions

Prepare couscous as directed on package. Fluff with a fork and place in a large mixing bowl. Let cool in the refrigerator.

As couscous is cooling prepare dressing as follows:
Place olive oil, juices, basil, mint, salt, and pepper in a small bowl. Whisk to combine. Allow to rest to hydrate spices.

Tear or chop spinach into bite-sized pieces.

Add spinach and feta cheese the cooled couscous and toss lightly to combine. Remix dressing, if necessary, and pour over couscous mixture. Toss lightly to coat.

Salad can be kept in the refrigerator for several days.
