    1 tbsp olive oil
    2 cloves of garlic, thinly sliced
    2 medium zucchini, cut into long thin strands (use veggie peeler)
    1/4 tsp salt
    1 cup cherry tomatoes, halved
    2 tsp lemon juice
    1/4 cup parmesan cheese
    optional red pepper flakes 1/8 tsp


heat oil in a large nonstick skillet. Add garlice and cook, stirring 1 minute or until just soft.
add zucchini and salt and cook, stirring frequently, for about 5-6 minutes. Stir in tomatoes. Remove from heat, add lemon juice and cheese. add pepper flakes if you want. (cheese is also optional - i don't always use it.)

makes 4 servings, (about 1 cup)

    I can't wait to make this! I eat Zucchini all the time and this NEW way sounds like a perfect side dish way again to replace rice or potatoes or real pasta!!! - 4/19/09
