Introduction

Perfect for a quick back to school breakfast! Great for when you only have time to grab something as you're heading out the door. They keep really well, so they're perfect fo making on the weekend and eating throughout the week. Adapted from NIgella Lawson recipe in "Nigella Express." Ingredients

    1 - 14 oz can fat-free sweetened condensed milk, minus 2 tbs.
    2 tbs. blackstrap molasses
    2 1/2 cups rolled oats, not instant
    3/4 cup almonds (or other nut)
    1 cup dried apples (or other dried fruit)
    1 cup craisins (or other dried fruit)
    3/4 cup pumpkin seeds (or other seed)
    1/4 cup candied ginger, cut into small pieces
    1 tsp. ground cinnamon
    1/2 tsp. ground nutmeg
    1/4 tsp. ground cloves

Directions

Preheat the oven to 250 degrees. Oil a 9 x 13 baking pan thouroughly or use a disposable aluminum pan.

Warm the sweetened condensed milk and molasses in a pan over medium-low heat.

Mix the rest of the ingredients together in a large bowl. Then stir in the warmed milk and molasses mixture. Make sure to stir well.

Spread the mixture into the oiled or foil pan and using a sheet of waxed paper press down on the mixture until the surface is even.

Bake for one hour. Let cool for 15 minutes, cut into bars or squares. Let cool completely before removing from pan.

Bars can be kept in tupperware with wax paper in between the layers or wrapped in plastic wrap to be stored individually.

Makes 16 bars.
