I'm sure this would be lovely, but can I use unsweetened applesauce instead of a cup of oil? - 2/6/09

I was into the recipie when I realized that I did not have any baking powder. I omitted it and the bread was still amazing! This is the first zucchini bread I have ever enjoyed without butter. - 4/21/10

I skimped on sugar and oil and I messed it up. It was still ok. But I will just have to follow the recipe next time! - 8/16/09

Yummy. I made this one and added a little (1 tblsp) coco to the mix. I baked little mini loaves, my family really liked.
    I'll make this again.
