Great recipe! I chopped up the chicken to shorten cooking time, and threw in a large handful of chopped cilantro. And my mango was a dud so I used canned pineapple instead. All else according to the recipe. Delicious! - 8/29/11

Delicious! I didn't use the salsa in the rice but added 2tbs of toasted coconut and 1/4 tsp sea salt. Best thing I've eaten in awhile! - 6/3/11

Mango isn' my favorite fruit, but when it's cooked - it's just to die for. No one in my family would finish this meal when I cooked it, so I'll be looking for different recipes with cooked mango! - 5/16/10

This recipe turned out fantastic. I actually used the garlic and ginger (used fresh) and made a rough marinade out of it unintentionally. As I was preparing supper, my daughter had an emergency so everything went in the fridge. We made it the next day and it was most fantastic! Also added more salsa - 3/13/10
