Introduction

An experiment in low fat cooking that seemed to work! I don't even think you would need the oil at all, and you can always use applesauce instead.
This was a BIG batch for a large breakfast, so you may want to make half of it!

Ingredients

    1 c white flour
    1 c whole wheat flour
    1.5 c quick cook oats
    2 tbsp sugar
    2 tsp baking powder
    1 tsp baking soda

    2 eggs
    1/3 cup egg whites (or 2 egg whites)
    1 tsp vanilla (can use more)
    1/2 cup nonfat total greek yogurt
    2 c water

Directions

Mix dry ingredients together.
Mix egg yolks, oil, vanilla and yogurt. Add water.
Beat egg whites until stiff.
Mix wet and dry ingredients, then fold in egg whites.
Cook!
Makes 2ibs of pancakes - serving size is 1 oz (for ease of conversion).
