Ingredients

2 lbs potatoes thinly sliced
1 medium onion thinly sliced
2 cups 1% milk
1 tbsp flour
1 tbsp olive oil
1 cup reduced fat Mexican cheese
2 tsp salt
1/2 tsp pepper
Directions
Makes 8 servings
1. Preheat over to 375°F. Coat a 2-quart baking dish with cooking spray.
2. Heat olive oil in a large pot over medium heat. Add onion and cook until onion begins to brown, about 5 minutes. Stir in flour. Stir in milk.
3. Stir in potatoes and bring to a boil. Stir in salt and pepper. Add 3/4 cup cheese and stir.
4. Pour into baking dish. Bake for 1 hour, uncovered at 375°F. Cover and bake about 20 minutes.
4. Preheat broiler. Add remaining cheese to top of casserole. Broil 1 to 2 minutes until cheese is melted. Allow to cool 5 minutes.
