Introduction

For this recipe you can use any kind of pasta you like. For this recipe you can use any kind of pasta you like.
Number of Servings: 4

Ingredients

    2 cups Pasta * of any choice
    2 tbsp garlic
    1/2 Peppers, red and green each
    1/2 onion
    2 tomatoes
    1 medium eggplant
    1/3 cup chicken stock

Directions

1. First cook the pasta as instructed on the packet.
2. While pasta cooks, prep all the vegetables
3.Saute the onion, peppers and eggplant in a separate pan.
4. when egg plant cooks, add tomato and garlic along with the herbs. Then add salt for taste and pepper if you like it hot.
5. Add the chicken stock to make the sauce.
6.then add the pasta and mix together before serving.
7. you can also opt to serve the sauce on top of the pasta instead of mixing together
