Ingredients

    4-6 boneless, skinless chicken breasts
    1 can cream of chicken ("lighten" by using reduced fat)
    1 16 oz. jar salsa
    1 packet taco seasoning
    1 8 oz. container sour cream ("lighten" by using reduced fat)

Directions

Place chicken, soup, salsa, and taco seasoning in slow cooker.
Cook on low 4 hours.
Add sour cream.
Cook on low for another 30 minutes.
Shred chicken
Serve over rice, wrap in tortilla, place in a taco shell, or dip with corn chips.

    This was excellent! I only used enough taco seasoning to lightly cover the chicken. Used 1 can of cream of mushroom instead, enough salsa to cover chicken and didn't even bother with the sour cream at the end. We served it over rice and my husband said it was more delicious with every bite! - 10/13/08

    Very Good
    I made this for my family tonight. My husband, son and his friend loved it! The boys' said they need the recipe when they go away to college. I made some minor changes...added can corn and black beans. I served it over low-glycemic rice and topped it with reduced fat cheese. Very tasty! - 5/2/10

    Delicious & so easy. Mixed first four ingredients the night before & refrigerated, then cooked on high an hour to take chill, ready for lunch...friend loved it. - 3/19/10
