Ingredients

    1 lb Turkey Italian Sausage
    1 tbsp olive oil
    2 large onions (vidalia are best)
    3 cloves garlic
    1 28 oz can of plum tomatoes
    48 oz chicken broth (99% fat free)
    3 15 oz cans of Great Northern beans or canneloni beans
    2 cups water
    2 tbsp dried basil
    Italian seasoning (to taste)

Directions

Remove sausage from casings and cook in skillet with the olive oil all the way through.
Plave on paper towels and drain as much fat out as possible.
Coarsely chop the onion and cook for a few minutes in the same skillet with 1/2 of the garlic.

take 1 of the cans of beans and puree it (this is to help add some thickness to the soup).

Add all other ingredients to a big pot.

Heat up and add in all of the drained sausage, onion, garlic and pureed beans.

Bring to a boil, stirring frequently and then reduce heat.

Cook on stove top on low/medium for up to 1 hour (until ingredients are soft to your personal liking).

you can add fresh spinach leaves cut into thin strips on top as a garnish as well as a sprinkle of parmesean.
another thing most people do is cook a little ditalini pasta and add in right before you serve.
