Ingredients

    1 lb. Ground Beef
    1 Cup Onions, sliced
    3/4 CupCelery, diced
    1-1/2 Cup Cabbage, sliced
    3/4 Cup Carrots, sliced
    1 Cup Green Beans (snap), frozen or canned
    1 Can Kidney Beans, drained
    1 Tbls, Minced Garlic
    1 Tsp. Basil
    1 Cup Sweet Corn, caned or frozen
    2 Cans Diced Tomatoes)
    1-1/2 Cup Potato, peeled and cubed
    1/2 Cup Peas, frozen,
    2 Med. Zucchini, peeled and s\diced
    8 Cups,Water, (8 fl oz. each
    1/2 Tsp. Salt, or to taste
    Pepper, black, .to taste)


Directions

1. In a large kettle, slowly brown Meat and Onions untill Onions are transparent.
2. Add all ingredients except Potatoes, Peas and Zucchini.
3. Simmer about 45 minutes.
4. Add Potatoes, Peas and Zucchini.
5. Simmer until Zucchini and Potatoes are tender.
6 Serve with Crusty Rolls (not in nutritional information)

    great soup--I didn't have diced tomatoes so I used a tomato basil sauce that I had on hand!! All the veggies make for a very hearty yummy soup! - 9/12/10

    Thank You for enjoying my soup...It's a great one to freeze and for using all the wonderful veggies from the garden....Add any other ingredients that you like. This is a very versitile recipe.

    Very Good
    I made this with 1lb of beef arm roast. I added cooked lentils and lima beans to mine and a splash or two of Worcestershire sauce. I served mine thin, but this could be thickened to make beef stew. Thanks! - 3/10/09

    I tried this with leftover pot roast and added macaroni instead of potato. It was great - 12/9/08
