Introduction

An easy and quick delicious high protein/ lower carb breakfast for one! Recipe can be doubled easily for additional servings. This makes a great brunch dish! Ingredients

    1 organic egg
    1/2 C organic egg whites
    1 TBSP goat milk cheese
    1/4 C Kraft 2 % Italian shredded cheese
    2 C fresh spinach
    1/2 C grape tomatoes
    2 TBSP chopped red onion
    Mrs. Dash seasoning
    pepper
    1 tsp smart balance light

Directions

Saute onions in smart balance. Add spinach and tomatoes and saute until spinach wilts. Beat egg and egg whites together, add goat cheese and add to pan. Sprinkle shredded cheese on top. Saute about 2 minutes then transfer pan to oven and broil on high for 5 minutes.
