Introduction

This is so simple and tastes so good! You can use whatever veggies you want to add. You can also use ground turkey. My mom always made a version of this and my husband was not excited when I first made it, however he ate 3 servings! This makes the best leftovers. This is so simple and tastes so good! Ingredients

    1 lb of extra lean (93%) ground beef
    2 cloves garlic, chopped fine
    1 small onion, chopped
    1 large sweet potato, sliced
    1 large potato, sliced
    1 large summer squash or zuccini, sliced
    1 can Low Sodium Tomato Soup
    1 can Low Fat Cream of Mushroom Soup
    Salt and Pepper

Directions

Preheat the oven to 425
Mix onion, garlic and ground beef and press into bottom of 9 inch casserole dish. (These are deeper than a pan)
Layer the potatoes on top of beef, then layer the veggies.
Evenly spoon on the mushroom then the tomato soups. Salt and pepper as desired.
Bake for 35 minutes covered, then 10 uncovered. When a fork easily goes through the potatoes, it is done.
Makes 8 servings.
