Can be made ahead of time and re-heated or the same morning.

Ingredients

    Steel Cut Oats, dry, 1 cup (remove)
    Rice Dream Vanilla Rice Milk - Enriched, 5 cup (remove)
    Apricots, dried, 9 half - chopped
    Cranberries, dried, sweetened (craisins), 1/3 cup
    Honey, .5 cup
    Cinnamon, ground, 3 tsp
    Nutmeg, ground, 1 tsp
    Vanilla Extract, .5 tsp

Directions

In a medium-large pot (I use a non-stick pot with glass lid) add the rice milk and slowly bring temp to medium high, stirring constantly, add cranberries, keep stirring, add cinnamon, nutmeg, and vanilla a minute later, and continue to stir for another minute then add honey, stir in well, then add oats, stir in well, stir for 1 minute, add apricots and reduce heat to simmer (for older stoves somewhere in between low and warm). Cover and stir every 3 minutes for the first 15 minutes then every 4-5 till it reaches desired consistency. Take off heat and let cool for 10 minutes with lid off stirring two or three times.
