Introduction

This makes a great light lunch or a nice side dish for supper. This makes a great light lunch or a nice side dish for supper.
Number of Servings: 3

Ingredients

    1 clove garlic
    1 small onion, diced
    1 tsp canola or olive oil
    1/4 tsp curry powder
    1 3/4 cup water or unsalted stock (chicken or vegetable)
    1 1/2 cups diced eggplant
    1 Tbsp minced rosemary, fresh
    1 carrot, grated
    1 box Near East Mediterranean Curry Couscous
    1/2 cup seedless grapes, halved

Directions

Heat oil in 2 qt pot, add garlic and onion, saute until transluscent. Add 1 3/4 cup water, 1/4 tsp curry, spice packet from couscous, eggplant, rosemary and grated carrot. Bring to boil, boil about 3 minutes. Add couscous, cover, remove from heat, let sit 5 minutes. Stir in grape halves and serve. Makes 3 main-dish servings or 5 1-cup side dish servings.
