Introduction
This is a great mini breakfast meal, with a glass of Diet V8 juice. I use Trader Joes Whole Grain Mini Pita Pockets (tricky to open, but fun to eat!) but half of the Alternative Pita Bread works too!Also any type of deli meat works in this (make sure to change the nutritional value) I use a middle eastern meat called basterma, but pastrami works great! Ingredients

1/2 Western Bagel Alternative Pita (or 2 mini pita pockets from T.J)
1/2 cup Egg Beaters
1/2 Tblsp Promise Light margarine
3 slices pastrami ( or basterma)
1 tblsp Kraft non-fat cheddar cheese
1 tsp black pepper, and salt (to taste)
Directions
Prepare the pita by opening it up to form a "pocket", set aside. In a small skillet on med. heat, melt the margarine. Cut up the pastrami slices into small bits, add to skillet and cook for 5 min. Add the egg beaters, cook for 5 min. Add the cheese, and scramble the eggs ( the way I do it is by folding one half of the egg onto the other half, and taking a spatula, I cut up the egg untill it is scrambled.) Sprinkle salt and pepper on the eggs. Turn off heat, and immediatley scoop (careful not to break the pita "pocket") the egg scramble into the pita pockets, and serve warm.
