Introduction

This cake is named after my favorite bed & breakfast, where I had it for the first time, made with pineapple. My version is a moist and not-too-sweet cake with a subtle peachy-apple flavor. Perfect as a low-fat dessert or coffee cake! This cake is named after my favorite bed & breakfast, where I had it for the first time, made with pineapple. Ingredients

    2 cups enriched unbleached flour
    1 cup sugar
    2 tsp. baking soda
    2 tsp. vanilla extract
    2 large eggs
    2 cups Chunky Peach applesauce, sweetened
    Frosting:
    3 Tbsp light cream cheese
    3/4 cup powdered sugar
    1 Tbsp skim milk (approx.)
    Optional topping:
    1/3 cup chopped walnuts (not included in calorie count)

Directions

1. Preheat oven to 350 degrees.
2. Lightly spray a 13x9 in. cake pan with cooking spray. Coat with flour.
3. Mix together flour, sugar, and soda in a large mixing bowl.
4. Add eggs, vanilla, and chunky peach applesauce and stir until blended.
5. Pour batter into prepared pan and bake for 30 minutes or until toothpick comes out clean (cake will be golden brown).
6. Cool in pan.
7. While cooling, blend softened cream cheese, powdered sugar, and enough skim milk to make a pourable frosting.
8. Drizzle frosting over cooled cake and cut into 15 pieces. Serve from the pan.

Skipping the frosting saves about 30 calories per serving.

Sprinkling 1/3 cup of chopped walnuts on top of the drizzled frosting adds about 20 calories and 2 grams of fat per serving (but adds great taste and texture!).

Makes 15 servings, approximately 2-1/2" x 3".
