This stew is great when the weather starts to cool down. This stew is great when the weather starts to cool down.
Number of Servings: 8


    2 lb. boneless pork tenderloin
    3 medium sweet potatoes (cubed)
    3 medium carrots (sliced into 1/2" pieces)
    1 cup chopped onion
    1 cup chopped apple
    1/2 cup chopped celery
    3 Tbsp quick cooking tapioca
    2 cups apple juice or cider
    1 tsp salt
    1 tsp black pepper
    1 tsp caraway seeds (optional)


Cut meat into 1 inch cubes.

Combine all ingredients in crock-pot.

Cover and cook on low for 10-12 hours.
