Number of Servings: 4

Ingredients

    1/2 lb pasta such as small shells or campanelle
    1 T olive oil
    1/2 cup diced onion
    2 cloves garlic minced
    1/4 - 1/2 t red pepper flakes
    2/3 bunch of kale or other braising greens, washed, stemmed and rough chopped
    1/2 cup chicken stock, water or white wine
    8 sun dried tomatoes, cut in strips and reconstituted in hot water
    1 can cannellini beans
    salt and pepper to taste
    romano or parmesan cheese to taste
    Diced fresh tomato (optional)


Directions

Makes 4 servings

Cook pasta according to directions.

In large pan heat olive oil over medium-high heat. Saute onions, garlic and red pepper flakes for 2 minutes. Add the greens and 1/2 cup stock, water or wine. Cover and let cook down for about 5 minutes. Add sun-dried tomatoes and their liquid. Add beans. Stir well and season with salt and pepper. Serve atop hot pasta with cheese and diced fresh tomatoes.
